Smoked Salmon and Mascarpone Cream Rosettes paired with Aperol Spritz
(Serves 4)

• 400gm smoked salmon
• 200gm mascarpone cream
• 10gm chives thinly sliced
• Zest of 1 lemon
• 1 tablespoon of lemon juice
• Pinch of salt
• Pinch of pepper
• Caramelised balsamic vinegar (optional)

1- In a bowl mix the mascarpone, chives, lemon zest, lemon juice, salt and pepper.
2- Lay out the slices of salmon and place the mascarpone mixture in the middle using a
teaspoon (or piping bag).
3- Roll the salmon into a cylinder shape.
4- Drizzle with caramelised balsamic to garnish (optional).

Aperol Spritz
(Serves 1)

• 30ml Aperol Liqueur
• 60ml Prosecco
• Soda water
• Ice
• Orange slices

1- In a wine glass place a handful of ice, pour in Aperol and Prosecco.
2- Top the glass with soda.
3- Garnish with orange slice.
